California Reserve is what we call our Holstein beef, a dual purpose breed that’s used for milk production and for meat production. Our Holstein beef is USDA Prime and really well marbled. Our high quality Midwest beef can be two different breeds: Angus, and possibly Hereford. We dry age our beef when the cut calls for it to maximize flavor and tenderness.
