Every once in a while, a primal will appear that is so over the top in terms of marbling and quality, that it amazes even us. It might be a Prime rib, a ribeye, a New York or a shortloin (Porterhouse). We can’t predict what it will be or when it will appear, but when something this special comes along, we’ll reserve that steak for The Library. Like the concept of library wines, we have carefully curated a selection of truly exceptional steaks.
Steaks on this page are one of a kind, with extremely limited availability. We believe that our library steaks represent the pinnacle of butchery, and we’re proud to share them with you. Indulge in the unparalleled taste and texture of these hand-selected, meticulously dry-aged steaks.
We hand cut them upon completion of the aging process which for these will be 30 days. Upon fabrication we rate these steaks much like fine wine, on a 100-point scale. Our normal steaks are at the 90 range. Steaks in The Library are a step above, scoring 98. After packaging, labeling and freezing, when they’re ready to ship, we will post each selection to The Library page. Quantities might be as low as a single item, or as high as 8-10.
