With the process of Dry Aging, time plays a very important role! Once the product has undergone the appropriate aging period, we carefully select each whole piece to fulfill our daily orders. Following the completion of these orders, we may have two or three remaining portions from each of the whole cuts. While these steaks match in terms of weight, their visual appearance may not be identical. Although they are of exceptional quality, they are considered “leftovers” as we do not have a designated purpose for them. Consequently, we designate them as “Mismatched” steaks, freeze them to preserve their flavor, and offer them at a reduced price point. By offering them at attractive per unit pricing, we keep our pipeline running smoothly; and make you happy at the same time!
