California Reserve Coulotte

Also known as the Picanha or Punta de Anca, the Coulotte comes from the sirloin of the animal. There is an ample fat cap left on one side of the cut, to give tremendous flavor during cooking. Each piece is approximately 2.5lbs. (note from katie: didn’t have enough time to get an image for this cut, apologies!)
