What’s up with the Choice club roast? Actually, a first-time opportunity here to test a unique product. We’ve experimented with true dry aging USDA Choice New York Strips to present a product with the same great tenderness as our Prime product; but in a leaner format. If we are talking about grilling steaks, there really isn’t a comparison between Prime and Choice; but when roasted, the slower/lower cooking method will deliver a tender juicy roast. So we’re happy to offer a leaner yet superb product at a more attractive price point


The best method is to roast these; both weights are approximately the same thickness, and therefor the same cooking times. Start with 15 minutes in a preheated 500 degree oven (fat side down), then flip the roast over and turn oven down to 350 degrees for another 30-35 minutes. Aim for an internal temp of about 110 for medium rare.
